According to the people of Macayo's, their founder, Woody Johnson, accidentally dropped a meat-filled burro into a fryer, and created the chimichanga. You can order one of their many chimichangas, such as the chimi de Macayo: beef, relleno sauce, tortilla, sour cream, rice, refried beans, and guacamole, to decide for yourself if this legend is true or not.
